Lung King Heen, or View of the Dragon, a Cantonese restaurant in the Four Seasons Hotel, Hong Kong, becomes the best Chinese dining room on the globe, as rated by Michelin, and the only three-star restaurant in the city.
The new edition of the guide also lists one three-star restaurant in Macao, the gambling centre an hour's ferry ride from Hong Kong: Robuchon a Galera, managed by the French celebrity chef Jo?l Robuchon, in Hotel Lisboa, which is owned by Stanley Ho, the tycoon.
The Hong Kong and Macao guide is Michelin's second in Asia, after Tokyo. Yves Chapot, the chairman of Michelin (China) Investment, said: “China has become one of the most vibrant countries in the world. This dynamism is well reflected in the change of lifestyle as well as the Chinese pursuit of culinary excellence.”
